Make the chicken meatballs

Put garlic (2 cloves), ginger (20 g), and spring onions (30 g) in the Thermomix bowl; chop 5 sec / speed 7. Scrape down sides.

Add chicken chunks, sesame oil, soy sauce, salt, pepper, and panko (1 tbsp). Mix 15 sec / speed 5 until just combined. The mixture will be sticky — that’s okay. If it’s too loose, you can add a little more panko.

Shape into ~12-14 meatballs (tablespoon sized).

Cook the meatballs

Heat a non-stick skillet with a bit of oil over medium heat. Cook meatballs in batches, browning on all sides, about 8-10 minutes total, until cooked through. (If you like, finish in the Thermomix Varoma for a juicier result, then pan-fry briefly for color.)

Make the slaw (without washing the bowl)

Add cabbage, carrot, red onion to the warm Thermomix bowl. Chop 3-4 sec / speed 5 until just the right texture (you want some bite).

Add mayo, rice vinegar, and a pinch of salt. Mix 5 sec / reverse / speed 3. Set aside.

Make the sauce

In a small bowl (or Thermomix bowl if clean), combine tonkatsu sauce, soy sauce, and honey. Warm gently if you like so it’s nice and saucy.

Assemble the sandos

Lightly toast or warm your bread slices.

Spread a little mayo on the bread. Layer: slaw → meatballs → sauce.

Garnish with sesame seeds, spring onions or cilantro, and maybe a squeeze of lime.
